There’s nothing quite as good as the sweet, comforting taste of pumpkin pie on a cool autumn evening. This classic dessert tastes like home, like the warm embrace of your mother after a long absence.
Here in Lancaster County, you can find pumpkins stacked high and lined up straight at roadside stands, farmer’s markets, and country stores alike. Pumpkin-flavored drinks and dishes are everywhere this season. While we love the creativity of these masterpieces, we also appreciate the tried-and-true traditional dessert that started it all: pumpkin pie.
Join us now as we discover the simple process to creating this traditional, delightful dessert…from our grandma’s kitchen to yours!
Pumpkin Pie
Ingredients:
- 2 deep-dish pie crusts
- 4 eggs
- 1 1/2 cup sugar
- 2 cups of pumpkin
- 1 tsp. lemon juice
- 2 Tbsp. flour, rounded
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- Pinch of salt
- 3 1/2 cups of milk
Step 1:
First, crack the eggs into a bowl and beat them on high with a kitchen mixer until the liquid is lightly colored.
Step 2:
Add sugar to the bowl and continue beating the mixture so that the batter becomes smooth and clump-free.
As you can see, this pumpkin pie stays true to its name — traditional ingredients with, as you will soon find out, a stunning taste!
Step 3:
Combine the pumpkin, lemon juice, flour, and spices to the bowl, mixing thoroughly. Lastly, add the remaining ingredient — milk — and stir well.
Don’t worry if the pie filling seems a bit thin and watery. As the pie cooks, the filling will solidify…and slowly become the pumpkin pie of your dreams.
Step 4:
Pour the pumpkin filling into the unbaked pie crusts. We bought ours from an local store but if you’re feeling adventurous, we encourage you to try making your own.
Step 5:
Place your pie in the oven, baking at 400◦F for 6 minutes. Then turn your oven to 350◦F and bake the pie for approximately 45 minutes or until pie is set all the way to the middle.
You can make sure the pie is cooked all the way through by sticking a fork into the filling. If the fork is clean, you’re good to go. If the fork has gooey batter on it, cook the pie some more!
